Canning is another food preservation method that has been used for many years. In fact, it has been an age old method of food preservation with secrets that have been handed down from generation to generation. Canning is usually the method used in order to preserve fruits and vegetables. In its most basic method, canning follows the same process no matter what other secrets other people may have acquired from previous generations. Its simplicity actually allowed people even in the past of an effective way of storing fruits and vegetables for long periods of time. The process involves boiling the food in order to kill the bacteria in it. The same process is followed for the container where the food will be stored. The food becomes sterile when all the bacteria is killed and is immediately transferred into the can or other container for sealing. This allows the food to be stored when it still has no bacteria in it. This is how food stays longer after canning. Once the can or container is opened, bacteria may again be introduced into the food. That is why freezing the contents may be required after the can is opened to make them stay good longer.

When you say canning, people may immediately think of can being of the metal kind. But in modern canning, most other types of containers may be good enough as long as they are sealable. One common example of such container is the glass jar. Even plastic or foil pouches can also be used as convenient canning containers.
