Another thing to consider when canning food is by limiting on using butter or fat to food products to be home canned unless they are required for a tested recipe. Butter and fat are known to increase the rate of spoilage and do not do well when stored for long period of time. Furthermore, butter or fats may slow down the heat transfer process.
